Darlene Drover made us DELICIOUS homemade chocolate cupcakes with boiled icing for Halloween. A few have been asking about this “boiled icing” and Darlene was nice enough to send along the recipe. ~Dan and Shannon
1 1/2 cups of brown sugar, 2/3 cup of water, 1/8 teaspoon of cream of tartar…DO NOT STIR.(Just put them in the pot and the boiling will do the rest.)
Put these in a heavy pot and bring them to a boil over medium heat until it reaches 245 degress on a candy thermometer.
While you are waiting for that to reach the temperature, take 3 egg whites, with a pinch of salt and beat with a mixer until there are stiff peaks.
When the hot mixture is ready, start to pour it in on the egg whites (your mixer should be on medium speed)…BUT POUR THIS IN SLOWLY (you don’t want to cook the whites). Once the hot mixture and the egg whites are combined, turn your mixer on high, set your timer for 7 minutes and let it beat for the entire 7 minutes.
When the 7 minutes are up add 1 teaspoon of vanilla and mix until it is blended in. You can put it right on your cooled cake or cupcakes (or Darlene said, as her grandkids do, grab a spoon and start eating it right out of the bowl!)
